Ingredients
  

  • 2 tsp Salt
  • 1.2 tsp Pepper
  • 1 tsp Cumin
  • 1 tsp Chili Powder
  • 1 tsp Cinnamon
  • 2 1/2 lbs Pork tenderloin Trimmed
  • 2 tbls Olive Oil

For Glaze:

  • 3/4 Cup Dark Brown Sugar Packed
  • 2 tbls Garlic Finley Chopped
  • 1 tbls Tobasco Sauce * Optional (We don't Use)

Instructions
 

  • Stir the spice rub ingredients together in a small bowl and rub all over the porkloin
    2 tsp Salt, 1.2 tsp Pepper, 1 tsp Cumin, 1 tsp Chili Powder, 1 tsp Cinnamon, 2 1/2 lbs Pork tenderloin
  • Heat Oil in an ovenproof 12-inch heavy skillet over medium high heat. Brown pork on all sides. About 4-5 minutes total.
    2 tbls Olive Oil
  • Remove from heat, but leave pork in the skillet
  • Stir together brown sugar, garlic and tasbasco in a small bowl. Pat the mixture on top of the pork.
  • Place the skillet in the oven at 350 degrees. Roast until the themometor registers 140 degrees (Insert the themometor diagonally into the center of the pork.) About 20 minutes.
  • Remove from the oven and let rest in skillet, loosley covered, for 10 minutes.
  • Slice and serve.
